If you’ve ever grabbed breakfast from a corner bodega in New York, you know the Bacon, Egg & Cheese isn’t just a sandwich...it’s a way of life.

Crispy bacon. Soft roll. Melty cheese. Runny yolk. It’s greasy perfection, usually eaten half-awake, standing on the sidewalk, coffee in hand.

Now we’re giving that iconic sandwich a Chilito twist - a drizzle of our hot sauce for just the right amount of heat and tang that cuts through the richness. It’s still comfort food, just with attitude.

Ingredients:

  • 1 kaiser roll, everything bagel, or brioche bun (NYC-style hero roll if you can find it)
  • 2–3 slices thick-cut bacon
  • 2 large eggs
  • 1–2 slices American cheese (or cheddar if you’re fancy)
  • 1 tablespoon butter
  • Salt and pepper, to taste
  • A good drizzle of Chilito Hot Sauce (or mix it into the eggs for a spicy scramble)

Directions:

  1. Cook the Bacon
    1. Heat a skillet over medium heat.
    2. Add bacon and cook until crisp, about 6–8 minutes.
    3. Transfer to a paper towel–lined plate, but don’t clean the pan — that’s flavor.
  2. Toast the Roll
    1. Slice your roll and toast both sides in the bacon fat (or a little butter) until golden.
  3. Cook the Eggs
    1. In the same pan, melt butter. Crack in the eggs.
    2. For that true bodega-style fold, pop the yolks and lightly scramble without fully mixing.
    3. Season with salt and pepper.
    4. Just before the eggs are done, top with cheese and cover the pan for 30 seconds to melt.
  4. Assemble the Masterpiece
    1. Bottom roll → eggs and melted cheese → bacon → drizzle of Chilito Hot Sauce → top roll.
    2. Wrap it in foil like a true bodega sandwich (it steams itself slightly and gets extra soft).
